Ingredients
Bruschetta Topping
- 1 Pint Cherry Tomatoes Diced
- ¼ C Fresh Basil Finely Chopped
- 1 Clove Garlic (Optional) Minced
- 2-3 Tbsp Fresh Lemon Juice
- 3 Tbsp Olive Oil
- 2 Tbsp Balsamic Vinegar
- Sea Salt To Taste
- Ground Black Pepper To Taste
Toasts Assembly
- Goat Cheese Crumbled
- Butter For Spreading on Toasts
- 1 Loaf Baguette
Instructions
Bruschetta Mixture
- Combine prepared tomatoes, basil, and garlic in medium bowl.
- Add lemon juice, olive oil, and balsamic vinegar to tomato mixture and stir until combined.
- Add salt and pepper to taste.
- Place bruschetta mixture in fridge for at least 1 hour prior to assembly for best flavor.
Toasts Assembly
- To prepare toasts, slice baguette into approximately ½-inch slices and lightly coat one side with butter.
- Using broil setting on oven, toast baguette slices butter side up until golden brown.
- To assemble, place a small amount of goat cheese in the center of each toasted baguette, and top with bruschetta mixture. Enjoy!
