Ingredients
- 2 Medium Butternut Squash
- 6-8 Tbsp Unsalted Butter Melted
- ¼ C Light Brown Sugar Packed
- 1 ½ Tsp Salt
- ½-1 Tsp Black Pepper
Instructions
- Preheat oven to 400°.
- Cut off the ends of the butternut squash and discard.
- Peel the squash and cut in half lengthwise
- Using a spoon, remove the seeds.
- Cut squash into 1 ¼ inch to 1 ½ inch cubes, and place them on a baking sheet.
- Add the melted butter, brown sugar, salt, and pepper.
- Toss all ingredients together and spread in a single layer on baking sheet.
- Roast for 45 to 55 minutes, until squash is tender and glaze starts to caramelize.
- Turn the squash while roasting a few times to brown evenly, adjust seasonings as needed.
