Caramelized Butternut Squash

The hardest part of this recipe is (after cutting the squash) is waiting for it to be done! You can basically pop it in the oven and forget about it, until the delicious smells waft through your house and you impatiently crack the oven to check if it's finished!

Ingredients
  

  • 2 Medium Butternut Squash
  • 6-8 Tbsp Unsalted Butter Melted
  • ¼ C Light Brown Sugar Packed
  • 1 ½ Tsp Salt
  • ½-1 Tsp Black Pepper

Instructions
 

  • Preheat oven to 400°.
  • Cut off the ends of the butternut squash and discard.
  • Peel the squash and cut in half lengthwise
  • Using a spoon, remove the seeds.
  • Cut squash into 1 ¼ inch to 1 ½ inch cubes, and place them on a baking sheet.
  • Add the melted butter, brown sugar, salt, and pepper.
  • Toss all ingredients together and spread in a single layer on baking sheet.
  • Roast for 45 to 55 minutes, until squash is tender and glaze starts to caramelize.
  • Turn the squash while roasting a few times to brown evenly, adjust seasonings as needed.
