Ingredients
  

  • Bread Crumbs For Coating
  • Oil For Frying

Chicken

  • 2 Boneless Skinless Chicken Breast
  • Salt To Taste
  • Pepper To Taste

Ball Mixture

  • 2 Eggs
  • ½ C Flour
  • 1 Tsp Dried Rosemary
  • ¼ C Fresh Parsley Chopped
  • 3 Strips Bacon Cooked and Crumbled
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Pepper
  • 7 Oz Shredded Mozzarella
  • ½ C Chipotle Sauce
  • 1 Tbsp Salt

Instructions
 

  • Preheat the oven to 400°.
  • Season both sides of the chicken breast with salt and pepper.
  • Bake the chicken breasts for 25 minutes, or until cooked through.
  • With two forks, shred the chicken.
  • Add the eggs, flour, rosemary, parsley, bacon, garlic powder, onion powder, pepper, mozzarella cheese, chipotle sauce, and salt. Mix to combine.
  • Preheat a pot of oil to 350°.
  • Make small balls with the chicken mixture by rolling between your hands. Then coat the balls in breadcrumbs.
  • Fry the balls until golden brown, about 2-3 minutes.
  • Drain on a paper towel to remove excess oil and sprinkle with salt.
  • Garnish with a sprinkle of parsley.

Notes

Use less salt than the recipe calls for or these will be too salty.
If you don't have time to shred your own chicken, pick up some pre-shredded chicken, or use a rotisserie chicken from the store!
