This creamy, delectable, bacon-y, spinach will have you begging for seconds. While some may say the copious amounts of butter, half and half, and cheese make it a smidge unhealthy... We say that it is full of spinach, so it's actually a health food!

Ingredients
  

  • 3 Strips Bacon Diced
  • ¼ C Onion Finely Chopped
  • 3 Tbsp Butter
  • 3 Tbsp Flour
  • 1 ¼ C Half and Half
  • 2 10 oz Packages Frozen Chopped Spinach Thawed and Well Drained
  • ½ Tsp Salt
  • ¼ Tsp Black Pepper
  • ¼ Tsp Ground Nutmeg
  • Shredded Parmesan Cheese

Instructions
 

  • Cook bacon half-way in skillet. Remove from skillet and put onion in skillet, cooking until tender, then remove from skillet. In a large saucepan, melt butter. Stir in flour until smooth. Gradually stir in cream. Bring to a boil over medium heat, cook and stir for 2 minutes.
  • Reduce heat; stir in spinach, salt, pepper, nutmeg, bacon, and onion. Cook and stir for 5 minutes or until heated through. Sprinkle with parmesan cheese.
