Tilapia in Roasted Red Pepper Sauce

This is the perfect roasted red pepper sauce. Add in some tender, flaky tilapia, and you have the perfect light, romantic meal! Pair it with fresh bread and your favorite wine!

  • Large Nonstick Skillet
  • Stovetop

Ingredients
  

  • 1 lb Tilapia Fillets
  • 3 Tbsp Butter
  • 1 Medium Onion Diced
  • 2 Cloves Garlic
  • 6 oz Roasted Red Bell Peppers Chopped
  • 6 oz Roasted Red Bell Peppers Puréed
  • ¾ C Heavy Cream
  • ½ C Parmesan Cheese Grated
  • Salt
  • Pepper
  • Parsley Chopped, To Garnish

Instructions
 

  • Melt 2 tablespoons of butter in a large, non-stick skillet and fry the fish for 3-4 minutes on each side, until cooked through.
  • Season the fish with salt and pepper, remove from the skillet and set aside. To the same pan, add the remaining 1 tablespoon of butter and onion and sauté for 5 minutes.
  • Add garlic, chopped and puréed roasted peppers, and keep cooking for another 5 minutes.
  • Add heavy cream and parmesan cheese. Turn off the heat, stir, and taste if the sauce needs more salt.
  • Return the fish to the pan and cover with sauce.
  • Garnish with chopped parsley and grated parmesan cheese.

Notes

While store bought roasted red peppers work, this recipe tastes best with fresh roasted red bell peppers.
