Barbacoa-Style Beef Tacos

This beef taco is far from your average, boring taco. Made from an irresistible, juicy beef chuck roast and slow cooked with chipotles, herbs, and spices, this barbacoa style taco will certainly be a hit! If you happen to have any leftovers, you can toss it in a salad or serve with rice!

2-3 lb Beef Chuck Roast 4 Chipotle Chiles in Adobo Sauce Chopped 5 Clove Garlic Chopped 1 Tbsp Ground Cumin 2 Tsp Oregano ¼ Tsp Ground Cloves ½ C Beef Broth ¼ C Apple Cider Vinegar ¼ C Fresh Lime Juice 3 Bay Leaves Salt Pepper For Serving (Optional) Corn or Flour Tortillas Cooked Rice Pico De Gallo Sour Cream Shredded Cheese Guacamole or Avocado Cilantro
Cut the roast into approximately 6 to 8 large chunks.
Season well with salt and pepper on all sides.
Heat oil in a large skillet and sear the beef chunks on all sides until browned.
Transfer seared meat to a slow cooker.
In a medium bowl, combine the chopped chipotles, garlic, cumin, oregano, cloves, beef broth, vinegar, lime juice, and additional salt and pepper.
Mix well, then pour over beef in the slow cooker and add the bay leaves.
Cover and cook on low for 8-10 hours until meat shreds easily.
