Crustless Spinach Quiche

This quiche recipe is made with eggs, spinach, and Muenster cheese. With no heavy crust and ready in less than an hour, this recipe will quickly become your go-to for any time of day! It reheats very well, so you can save the leftovers for later.

Ingredients
  

  • 1 Tbsp Vegetable Oil
  • 1 Medium Onion
  • 1 10-oz Package Frozen Chopped Spinach Thawed, Drained, and Squeezed Dry
  • 5 Large Eggs Beaten
  • ¼ Tsp Salt
  • Tsp Black Pepper
  • 3 C Shredded Muenster Cheese

Instructions
 

  • Preheat oven to 350°F. Lightly grease a 9-inch pie pan.
  • Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until soft, about 3 minutes. Stir in spinach and continue to cook until excess moisture has evaporated.
  • Whisk together eggs, salt, and pepper in a large bowl. Add Muenster cheese and spinach mixture and stir until well blended.
  • Pour into the prepared pan.
  • Bake in the preheated oven until eggs have set, about 30 minutes.
  • Remove from oven and let cool for 10 minutes before serving.

Notes

We've never really modified the recipe a whole lot, but you could very easily throw your own twists on it by adding ham or bacon, and substituting cheddar, feta, or goat cheese. You could also add in some sort of peppers to give it a little extra kick!
We love to eat this with all varieties of Cholula!
