Taco Bell Copycat Quesadillas

Ingredients
  

Creamy Jalapeno Sauce

  • ¼ C Mayonnaise
  • 2 Tsp Jalapeno Slices Minced
  • 2 Tsp Jalapeno Juice
  • ¾ Tsp Sugar
  • ½ Tsp Paprika
  • ½ Tsp Cumin
  • Tsp Cayenne Pepper
  • Tsp Garlic Powder
  • Salt To Taste

Quesadilla

  • 2 Chicken Breasts
  • Vegetable Oil
  • Salt
  • Pepper
  • Large Flour Tortillas
  • 1 C Cheddar Cheese Shredded
  • 1 C Monterrey Jack Cheese Shredded
  • American Cheese Slices

Instructions
 

  • Prepare creamy jalapeno sauce by combining all ingredients in a small bowl. Cover and chill to develop flavors. Stir occasionally.
  • Heat skillet to medium. Rub chicken with vegetable oil. Salt and pepper both sides of the chicken and cook until no longer pink. Slice very thin.
  • Prepare a skillet over medium-low heat. Once hot, lay one tortilla in pan. Arrange cheddar cheese, then jack cheese on half of the tortilla. Tear up the American Cheese slices and arrange it on top of the other cheese. Top with chicken and then spread sauce on the other half.
  • Fold over and cook until cheese is melted.
