Ingredients
  

  • 1 C Rice
  • 2 Red Bell Peppers Seeded, Sliced into Strips
  • 4 8 oz Boneless Pork Chops
  • ½ C Teriyaki Sauce
  • ¼ C Creamy Peanut Butter
  • 2 Tbsp Rice Wine Vinegar
  • 1 Tsp Crushed Red Pepper Flakes
  • 2 Cloves Garlic Minced
  • ½ C Green Onions Chopped
  • ¼ C Chopped Roasted Peanuts
  • 2 Limes Cut into Wedges

Instructions
 

  • Cook rice according to package directions.
  • Coat slow cooker with cooking spray. Place bell pepper strips and pork chops into slow cooker. Pour teriyaki sauce, vinegar, red pepper flakes, and garlic over the pork chops.
  • Cover and cook on low until the pork is very tender, 8-9 hours. Once tender, remove pork from the slow cooker and whisk in peanut butter until smooth. Return pork to slow cooker and cook 10 minutes more.
  • Pour into serving dish and sprinkle with green onions and peanuts to garnish. Squeeze lime wedges over pork when serving. Serve over rice.
