Ingredients
  

  • 3 C Cooked White Rice
  • 1 lb Protein of Choice (Optional, chicken and shrimp are good)
  • Green Onion (Optional, for topping)
  • 1 Tbsp Sesame Oil
  • 1 C Frozen Peas and Carrots Thawed
  • 1 Small Onion Chopped
  • 1 Tsp Garlic Minced
  • 2 Eggs Slightly Beaten
  • ¼ C Soy Sauce

Instructions
 

  • Cook protein of choice and set aside.
  • On medium-high heat, heat the oil in a large skillet or wok. Add the peas and carrots, onion, and garlic. Stir-fry until tender.
  • Lower the heat to medium-low and push the mixture off to one side, then pour eggs on the other side of the skillet and stir-fry until scrambled.
  • Add the rice, soy sauce, and protein of choice and blend all together well. Stir-fry until heated thoroughly.

Notes

This tastes even better when mixed with yum-yum sauce!
