
Pineapple Pulled Pork Sandwiches

Ingredients
- 4 lb Boneless Pork Shoulder (or Butt) Cut into 4" Pieces
- 20 oz Canned Crushed Pineapple
- 2 Tbsp Tamari or Soy Sauce
- 2 Tbsp Chili Powder
- 1 Tbsp Garlic Powder
- 2 Jalapeños Minced
- 4 Cloves Garlic Minced
- 2 Limes Juiced
- ¾ Red Onion Minced
- 2 Tsp Salt
- 1 Tsp Black Pepper
- BBQ Sauce For Sandwich
- Cilantro For Sandwich
- Hawaiian Buns (Or Other Bun of Choice) For Sandwich
Caramelized Pineapple
- ¼ Red Onion Cut into 1" Pieces
- 1 Pineapple Diced
- 3 Tbsp Brown Sugar
Instructions
- In a slow cooker add all ingredients from pork to salt and pepper. Set slow cooker to high for 4 hours. Pork should be falling apart. Using two forks, shred the pork in the pot (removing any large fat pieces) and stir around to absorb all the juice. Adjust salt as needed.
- While the pork is cooking set a skillet over medium heat. Add all the ingredients for caramelized pineapple and stir until sugar begins to melt. Stir often until pineapple begins to brown and onions begin to soften. About 8-10 minutes add water a few tablespoons at a time to deglaze the pan if needed. Stir until all sides are golden.
- On a brioche or sweet Hawaiian bun scoop ⅓ cup pulled pork and top with BBQ sauce, caramelized pineapples, and cilantro. Enjoy!
Notes
If you want to use pre-made pork, simply caramelize the red onions and mix the onions and jalapeños with the pork. Season to taste.
