This recipe takes one of our favorite slow-cooker pulled pork recipes (Or use your own favorite pulled pork!) and combines it with sweet caramelized onions and the fluffiest buns to make the best pineapple pulled pork you'll find!
4lbBoneless Pork Shoulder (or Butt)Cut into 4" Pieces
20ozCanned Crushed Pineapple
2TbspTamari or Soy Sauce
2TbspChili Powder
1TbspGarlic Powder
2JalapeñosMinced
4ClovesGarlicMinced
2LimesJuiced
¾Red OnionMinced
2TspSalt

BBQ SauceFor Sandwich
CilantroFor Sandwich
Hawaiian Buns (Or Other Bun of Choice)For Sandwich
Caramelized Pineapple
¼Red OnionCut into 1" Pieces
1PineappleDiced
3TbspBrown Sugar
Instructions
In a slow cooker add all ingredients from pork to salt and pepper. Set slow cooker to high for 4 hours. Pork should be falling apart. Using two forks, shred the pork in the pot (removing any large fat pieces) and stir around to absorb all the juice. Adjust salt as needed.
While the pork is cooking set a skillet over medium heat. Add all the ingredients for caramelized pineapple and stir until sugar begins to melt. Stir often until pineapple begins to brown and onions begin to soften. About 8-10 minutes add water a few tablespoons at a time to deglaze the pan if needed. Stir until all sides are golden.
On a brioche or sweet Hawaiian bun scoop ⅓ cup pulled pork and top with BBQ sauce, caramelized pineapples, and cilantro. Enjoy!
Notes
If you want to use pre-made pork, simply caramelize the red onions and mix the onions and jalapeños with the pork. Season to taste.
