
Smokey Chipotle Meatloaf

Ingredients
- 2 Eggs
- ⅓ C Hickory Flavored BBQ Sauce
- 2 Clove Garlic Minced
- 4 Chipotle Chiles in Adobo Sauce Minced
- 2 Tbsp Adobo Sauce
- 1 Tsp Salt
- 1 Tsp Black Pepper
- ½ Tsp Celery Salt
- ½ Tsp Cumin
- 1 Tbsp Worcestershire Sauce
- 1 Onion Chopped
- ½ C Dry Oatmeal
- 2 lb Lean Ground Beef
- 2 Tbsp Hickory Flavored BBQ Sauce
Instructions
- Preheat oven to 350°. Spray a 9x5 loaf pan with cooking spray.
- Beat the eggs in a large mixing bowl until smooth, then whisk in barbecue sauce, garlic, chipotle chiles, adobo sauce, salt, pepper, celery salt, cumin, and Worcestershire sauce until smooth.
- Mix in onion oatmeal, and ground beef with hands until blended. Pack the mixture into the prepared pan. Brush the top of the meatloaf with 2 tablespoons of barbecue sauce.
- Bake in the preheated oven until no longer pink in the center, about 1 hour, or until a thermometer reads at least 160 degrees.
