This meatloaf has the perfect combination of spicy, sweet and smokey flavors. After you eat the meatloaf, the leftovers make great meatloaf sandwiches! Don't make this recipe at 2am if you're about to fall asleep... You might forget it in the oven and end up with a lump of charcoal like we did once!
Preheat oven to 350°. Spray a 9x5 loaf pan with cooking spray.
Beat the eggs in a large mixing bowl until smooth, then whisk in barbecue sauce, garlic, chipotle chiles, adobo sauce, salt, pepper, celery salt, cumin, and Worcestershire sauce until smooth.
Mix in onion oatmeal, and ground beef with hands until blended. Pack the mixture into the prepared pan. Brush the top of the meatloaf with 2 tablespoons of barbecue sauce.
Bake in the preheated oven until no longer pink in the center, about 1 hour, or until a thermometer reads at least 160 degrees.
