Toasted Chile Chicken Skewers

These chicken skewers are marinated in a chili oil to make them spicy, brown sugar to add a layer of sweetness, soy sauce for a layer of saltiness, and garlic for a layer of... well, garlic!

Equipment

  • Wooden Skewers (Soaked in water for at least 4 hours)
  • Stovetop

Ingredients
  

  • ¼ C Vegetable Oil
  • 1 Tbsp Crushed Red Pepper Flakes
  • 2 Tbsp Light Brown Sugar
  • 2 Cloves Garlic Finely Grated
  • 3 Tbsp Soy Sauce
  • Salt
  • Pepper
  • 1 Tbsp Fresh Lemon Juice
  • 2 lb Chicken Thighs Halved
  • 2 Green Onions Thinly Sliced

Instructions
 

  • Heat oil and red pepper flakes in a medium pot over medium heat until oil is sizzling and has turned a bright orange color. Remove from heat and add garlic, brown sugar, soy sauce, and season with salt and pepper. Let cool slightly and add lemon juice.
  • Pour mixture over chicken and let sit at least 2 hours, up to overnight.
  • Thread three pieces of chicken onto each skewer. Place skewers onto a foil lined baking sheet, and broil until chicken is cooked through, browned and charred ins pots, 10-12 minutes.
  • Serve with sliced scallions sprinkled over.
