
Toasted Chile Chicken Skewers

- Wooden Skewers (Soaked in water for at least 4 hours)
- Stovetop
Ingredients
- ¼ C Vegetable Oil
- 1 Tbsp Crushed Red Pepper Flakes
- 2 Tbsp Light Brown Sugar
- 2 Cloves Garlic Finely Grated
- 3 Tbsp Soy Sauce
- Salt
- Pepper
- 1 Tbsp Fresh Lemon Juice
- 2 lb Chicken Thighs Halved
- 2 Green Onions Thinly Sliced
Instructions
- Heat oil and red pepper flakes in a medium pot over medium heat until oil is sizzling and has turned a bright orange color. Remove from heat and add garlic, brown sugar, soy sauce, and season with salt and pepper. Let cool slightly and add lemon juice.
- Pour mixture over chicken and let sit at least 2 hours, up to overnight.
- Thread three pieces of chicken onto each skewer. Place skewers onto a foil lined baking sheet, and broil until chicken is cooked through, browned and charred ins pots, 10-12 minutes.
- Serve with sliced scallions sprinkled over.
